Overview

Carbohydrates are organic molecules composed of carbon, hydrogen, and oxygen, generally with the empirical formula (CH2O)n, and are classified by size into monosaccharides such as glucose and fructose, disaccharides such as sucrose and lactose, oligosaccharides, and polysaccharides such as starch, glycogen, and cellulose. They serve as the body's primary and most readily mobilized energy source, with glucose oxidation through glycolysis and downstream pathways supplying ATP, while polysaccharides act as energy stores and structural components and glycoconjugates contribute to cell recognition and signaling. The physiological impact of dietary carbohydrate depends not only on quantity but on type and digestibility, captured by measures such as the glycemic index that predict postprandial glucose and insulin responses. Carbohydrate quality and intake are central to nutrition science, influencing energy balance, glycemic control, and the management of diabetes, obesity, and metabolic syndrome, while interactions with the gut microbiota shape fermentation and host metabolism. Synthetic glycochemistry, including the preparation of glycosyl amides and related derivatives, supports investigation of carbohydrate structure and function. Themes in the associated literature include dietary carbohydrate and macronutrient integrity, glycemic index estimation, low-carbohydrate and high-fat regimens, and carbohydrate metabolism in health and disease.
